Watermelon Feta Cubes

Ingredients

  • 24 cubes watermelon 1¼ inches
  • 3 oz feta cheese crumbles
  • 2 tbsp mint finely chopped
  • balsamic glaze

Instructions

  • Cut out 24 cubes from watermelon, about 1¼ inch in size. Using a small spoon, scoop a divot in the middle.
  • Toss the feta crumbles with the chopped mint. Add this mixture to the holes scooped in the watermelon cubes.
  • Drizzle cubes lightly with balsamic glaze.
