Spanish Rice

A southern classic dish that is a crowd pleaser. This rice dish boasts a savory kick along with a nice texture from the peppers and onions.

Ingredients

  • cups long grain rice
  • 1 stick butter dice into pieces
  • 1 8 oz mushrooms sliced
  • ½ medium green pepper chopped
  • 2 10 oz cans beef consomme' soup
  • 1 small onion diced
  • ¼ cup soy sauce

Instructions

  • Preheat oven to 350°F.
  • Chop the green pepper and dice the onion.
    Cut the butter into tablespoon chunks and set aside.
  • Mix all the ingredients except for the butter in a bowl. Pour into a 9x13 casserole dish. Place butter pieces on top of the dish.
  • Bake for 45 minutes.
