RiRi's Rotisserie Chicken Salad

- 1 cup rotisserie chicken
- ½ cup celery
- ¼ cup green onions
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp lemon juice
- ½½ cup mayo
Pull the chicken meat from the cooked chicken and place it in a medium bowl. You can shred it or cut it into small cubes.
Dice the celery into small pieces and place it in the bowl with the chicken.
Slice the green onions, including the green tops, and place in the bowl.
Add in the rest of the ingredients and stir together until well mixed.
Chill for an hour before serving.
This recipe can be made to your taste. Add more or less onions, celery, or mayo to suit your taste.
Other ingredients that could be added:
- grapes,
- walnuts or pecans
- water chestnuts
