Italian Grinder Sliders

Ingredients

Grinder Sandwich

  • 1 pkg Hawaiian sweet rolls
  • 8 oz sliced ham
  • 4 oz provolone cheese
  • 3 oz thinly sliced pepperoni
  • 3 oz thinly sliced hard salami

Grinder Salad Topping

  • 8 oz shredded lettuce
  • ½ cup diced tomatoes
  • ½ cup pepperoncini peppers
  • ¼ cup diced red onion
  • ¼ cup mayonnaise
  • 1 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder

Instructions

  • Slice the Hawaiian buns open horizontally and lay the bottom half on a 9 x 13 cookie sheet.
  • In a medium bowl, combine the lettuce, tomatoes, red onion, and pepperoncini peppers. Add the mayonnaise, red wine vinegar, and spices, and stir well to coat the salad ingredients.
  • Start building the sandwiches by layering the ham, pepperoni, salami, and provolone cheese. Add the top layer of buns and cut through the sandwiches between the rolls. Lift the top layer of buns and add the salad topping.
  • Replace the top buns, cover, and chill until ready to serve.

Notes

To make warm Italian Grinders, preheat 350 degrees.  Once you have built the sandwiches and sliced through the top buns, brush the buns with the glaze below and bake for 15-20 minutes, until the cheese has melted.
2 tbsp melted butter
2 tbsp grated parmesan cheese
1/2 tsp garlic powder
1/4 tsp salt
Once the sandwiches are done, remove the tops and add the salad topping.  Replace the top buns.  Serve immediately.
