Meatloaf. My husband loves Meatloaf. Not just the edible meatloaf, but the band Meat Loaf as well. Did you know that DJs used to play “Paradise by the Dashboard Lights” by Meat Loaf when they needed a smoke or bathroom break? Who knew??!! LOL! It’s 8 minutes and 28 seconds long. Okay, let’s talk about the meatloaf for Sunday Dinner

Meatloaf is a classic meal that has been a staple on many Sunday Supper tables—comfort food at its best. Serve it up with mashed potatoes and green beans, and you have a great family supper.

Ingredients

  • ground beef – lean ground beef is best for the mini meatloaves. It won’t have as much grease and shrink too much. I suggest 90/10 or 85/15.
  • onion – sweet onion or Vidalia gives a mild onion flavor
  • milk – adds moisture and tenderness
  • eggs – eggs work as a binding agent to hold the mixture together
  • garlic – fresh garlic adds a nice pungent flavor
  • ketchup – adds moisture, tangy-sweet flavor, and helps balance the richness of the meat in meatloaf.
  • panko – lighter and flakier, giving meatloaf a softer, airier texture. It absorbs liquid well without getting too dense.
  • Italian breadcrumbs are finer and pre-seasoned, which adds extra flavor and gives the meatloaf a tighter, more cohesive structure.
  • salt and pepper – to taste

Meatloaf Sauce

  • Ketchup: The base of the sauce—thick, sweet, and tomato-rich. It gives the glaze body and a familiar tang.
  • White vinegar: Adds sharp acidity that cuts through the richness of the meat, balancing the sweetness and enhancing overall flavor.
  • Brown sugar: Brings a deep, molasses-like sweetness that caramelizes as it bakes, giving the glaze that sticky, glossy finish.
  • Garlic powder: Adds warmth and subtle savory depth without the bite of raw garlic.
  • Onion powder: Provides a mild sweetness and umami, rounding out the sauce’s flavor.

Ingredients

Meatloaf Ingredients

  • 2 lbs ground beef 85/15
  • 1 medium onion, diced
  • 1 tsp olive oil
  • cup milk
  • 2 lg eggs
  • 3 cloves garlic, minced
  • 2 tbsp ketchup
  • ¾ cup panko
  • 3 tbsp fresh parsley
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp ground black pepper

Sauce Ingredients

  • ¾ cup ketchup
  • tsp white vinegar
  • 2 tbsp brown sugar
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions

  • Preheat oven to 350 degrees.
  • Finely chop the onion and add it to the hamburger meat in a large bowl. Add all of the following meatloaf ingredients to the bowl and mix well.
  • Spray or grease the meatloaf pan(s).
  • Divide the mixture evenly and place into each meatloaf pan. Do not pack down too tightly. Place all of the meatloaf pans on a cookie sheet and bake for 40 minutes.
  • Remove from the oven and top with the meatloaf sauce. Continue cooking for an additional 10-15 minutes. Let the meatloaf rest for 10 minutes before serving.
