RiRi’s Rotisserie Chicken Salad

Chicken Salad Ingredients
- Rotisserie chicken: Adds savory, seasoned richness and tender texture.
- Celery: Brings a crisp, refreshing crunch.
- Green onions: Adds mild sharpness and a fresh, oniony lift.
- Lemon juice: Brightens the whole salad with zesty acidity.
- Mayonnaise: Gives creamy richness and ties everything together.
- Salt and Pepper: Enhances and balance all the flavors.
RiRi’s Rotisserie Chicken Salad
Ingredients
- 1 cup rotisserie chicken
- ½ cup celery
- ¼ cup green onions
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp lemon juice
- ½½ cup mayo
Instructions
- Pull the chicken meat from the cooked chicken and place it in a medium bowl. You can shred it or cut it into small cubes.
- Dice the celery into small pieces and place it in the bowl with the chicken.
- Slice the green onions, including the green tops, and place in the bowl.
- Add in the rest of the ingredients and stir together until well mixed.
- Chill for an hour before serving.
Notes
This recipe can be made to your taste. Add more or less onions, celery, or mayo to suit your taste.
