Pistachio Fluff

This recipe was my little brother’s favorite. He couldn’t get enough of it. Mom didn’t make it very often, but when she did everyone wanted the recipe. It has just enough sweetness, some texture with the crunchy nuts and fluffy marshmallows, and a bit of fruit to make you feel like it is a healthy dessert.

Ingredients

  • pistachio pudding mix
  • crushed pineapples, undrained
  • whipped topping
  • miniature marshmallows
  • pistachios or pecans (optional)

How to make Pistachio Fluff

Mix the pistachio pudding mix and crushed pineapples in a medium bowl. Stir in the marshmallows and nuts. Gently fold in the whipped topping. Pour mixture into a pretty bowl or square casserole dish (9×9). Sprinkle the top with a few leftover chopped pistachios or pecans. Chill for at least 4 hours before serving.

  • 8 oz whipped topping
  • 1 cup miniature marshmallows
  • ½ cup pistachios or pecans chopped (optional)

Instructions

  • Mix the pistachio pudding mix and the undrained pineapples in a medium bowl.
  • Stir in the marshmallows and nuts.
  • Gently fold in the whipped topping.
  • For best results, chill for 4 hours before serving.

Notes

I love to use homemade whipped topping for this recipe.  However, because of time, I do use Cool Whip sometimes.
This can be served after chilling for 1 hour.  But it is much better when chilled for at least 4 hours.
