BBQ ribs are a beloved staple in our home, and the possibilities for preparing them are endless. Whether grilled, smoked, or oven-roasted, each method brings its own delicious charm. I’ve discovered that oven roasting is my go-to approach. It allows precise control over the low heat, ensuring perfectly tender results every time. To create the ultimate Sunday night feast, serve these ribs, baked beans, and a fresh salad—a winning combination that’s sure to please!

Ingredients

  • rack of ribs
  • black pepper
  • salt
  • brown sugar
  • smoked paprika
  • garlic powder
  • BBQ sauce of your choice (optional)

Prepare the ribs

A vital step to ensure tender ribs is to remove the membrane, aka silver skin, from the back of the ribs. Place the ribs meat side down on a cutting board. Start at one end with a small, sharp knife and lift the silver from a rib. Grab with your fingers and pull to remove it from the entire rack. Sometimes, it will come off all in one pull, but most of the time, you have to do it in sections.

Mix the spices and sugar in a small bowl. Rub the mixture all over the ribs, front and back. Doing this ahead of time and letting the ribs rest will allow the spice mixture to tenderize the meat and the flavor to sink in.

The rule of thumb for getting tender ribs is cooking them low and slow. For a full rack, the cook time is typically 2 to 2-1/2 hours @ 300 degrees or internal temperature reaches 160 degrees.

Optional step: Remove from oven about 15 minutes before ribs are done. Using a pastry brush, spread your favorite BBQ sauce over the ribs. Place back in the oven and finish cooking.

Ingredients

  • 1 rack St Louis or baby back ribs
  • 1 tbsp ground pepper
  • 1 tbsp salt
  • 2 tsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder

Instructions

  • Preheat oven to 325 degrees.
  • Prep the ribs.
    Cut away any excess fat and dangling pieces or meat.
    Turn ribs to over to rib side up and remove the membrane. This is an important step to help make them tender.
  • Combine all the spices and sugar in a bowl and mix together.
    Spread the dry rub all over the front and back of the ribs.
  • Wrap the ribs tightly in aluminum foil and place on a baking sheet. Place in oven and bake for 2 to 2½ hours. Internal temperature should be 160°.
