This breakfast casserole is a hearty, flavorful dish that’s perfect for feeding a crowd. It combines savory sausage, fluffy eggs, and melted cheese, layered on bread for added texture. This casserole is best when made ahead of time, allowing the flavors to meld overnight and making busy mornings easier. Just bake it fresh the next day for a warm, comforting breakfast that’s both convenient and satisfying.

Ingredients

  • Texas toast – substitute regular bread if you don’t like the thickness of Texas toast
  • eggs – large eggs are the best as they provide a lot of volume
  • sausage – to lighten up the calories you can substitute ham
  • cheddar cheese – sharp cheddar cheese gives a nice sharp cheese flavor
  • heavy cream – to lighten calories, use milk
  • salt and pepper to taste

How to make breakfast Casserole

Preheat the oven to 350 degrees. Grease a 9×13 casserole dish or pan.

  1. Butter the Texas toast and place it in the bottom of the casserole dish.
  2. Brown the sausage. Drain the grease. Spread sausage over the bread.
  3. Sprinkle the cheddar cheese over the sausage.
  4. Whisk together the eggs, heavy cream, salt, and pepper. Pour over the sausage and cheese mixture.

Place in preheated oven and bake for 45 minutes at 350 degrees. If you are making this ahead, cover tightly and refrigerate overnight. Bring to room temperature before baking.

  • 6-7 slices texas toast bread
  • 8 large eggs
  • 1 lb sausage
  • 2 cups cheddar cheese
  • 1 cup half and half
  • salt & pepper to taste

Instructions

  • Preheat oven to 350°. Grease a 9×13 pan.
  • Butter the bread and place in the bottom of the greased pan.
  • Brown sausage. Drain the grease and spread it on the bread. Next, spread the cheese on top of the sausage.
  • Whisk together the eggs, half-and-half, salt, and pepper. Pour on top of the sausage and cheese.
  • Bake for 45 minutes at 350 degrees. If you are making ahead, cover tightly and refrigerate overnight. Set out 15 minutes before baking.

Notes

To lighten the recipe, substitute diced ham for the sausage and milk for the half and half.  
For extra flavor, add onions and green peppers.  
For a quick breakfast, bake in a jumbo muffin tin.  Freeze the individual cups and reheat in the microwave.
