Beef Crostini

A refined appetizer featuring crisp, golden crostini topped with tender slices of filet mignon. Ingredients
- French baguette – a fresh baguette from the deli toasts up perfectly to hold up to the mayo spread and steak
- EVOO
- steak rub
- salt and pepper
- cumin
- coriander
- fresh garlic
- filet mignon steaks
- mayonnaise
- mascarpone
- fresh basil
- curry powder
- paprika
- fresh chopped basil for garnish
Beef Crostini
Ingredients
- 1/2 baguette sliced into 20 slices
- EVOO
- 1 tsp salt
- ¾ tsp black pepper
- ½ tsp cumin
- ½ tsp coriander
- 1 clove garlic finely minced
- 2 4 oz filet mignon steaks
- ½ cup mayonnaise
- 2 tbsp mascarpone cheese
- 2 tbsp fresh basil finely chopped
- 1¼ tsp curry powder
- ½ tsp paprika
Instructions
- Preheat oven to 400 degrees. Arrange bread slices on a baking sheet. Drizzle with EVOO and season with ¼ tsp salt. Bake for 10-12 minutes. Leave oven on.
- Spray a small baking sheet with vegetable oil cooking spray.
- Combine ½ tsp salt, ¼ tsp black pepper, cumin, coriander, and garlic. Rub the mixture all over the steaks. In a nonstick skillet, heat 2 tbsp EVOO over medium to high heat. Add steaks and cook for 2 minutes on each side. Transfer to a baking sheet and bake for 10 minutes. Let rest for 10 minutes before slicing. Slice across the grain into 20 slices (1/4 inch thick).
- Whisk together mayonnaise, mascarpone cheese, basil, curry powder, paprika, ½ tsp salt, and ½ tsp black pepper.
- Spread ½ tsp mayonnaise mixture on each slice of bread. Top with a slice of steak. Add a dollop of mayonnaise mixture on top of the steak. Garnish each slice with finely chopped basil.
