Let’s have a Fiesta!

There’s just something magical about a good fiesta — the colors, the flavors, the music, the energy. Whether you’re hosting a casual weeknight dinner or planning a full‑blown party with friends, nothing brings people together quite like sizzling fajitas, fresh guacamole, zesty salsa, and an ice‑cold margarita. This lineup is bold, bright, and guaranteed to get everyone in a celebratory mood.
Today, we’re building the ultimate DIY Fiesta Night menu featuring four of my favorites: RiRi’s Fajitas, Holy Guacamole, Simple Salsa, and Classic Margaritas. These dishes are easy, festive, and perfect for feeding a crowd — or just treating yourself to a little midweek fun.
RiRi’s Fajitas: The Star of the Fiesta
If you want a recipe that makes people stop mid‑conversation and say, “Oh my gosh, what is that smell?” — RiRi’s Fajitas are it. They’re sizzling, savory, and layered with flavor from the very first bite.
Think tender strips of chicken or steak, caramelized peppers and onions, warm tortillas, and all your favorite toppings. It’s a build‑your‑own situation, which means everyone gets exactly what they want. Easy for you, fun for them.
RiRi’s Fajitas
Ingredients
Meat Marinade
- 3 tbsp hot sauce Frank's Red Hot or Tabasco
- 2 tbsp ground cummin
- 1 tsp allspice
- 2 tbsp chili powder
- 1 tbsp oregano
- 1 tbsp thyme
- ½ 12 oz bottle beer full flavor, don't use light beer
- 1 tbsp extra virgin olive oil
Fajita Meats and Vegetables
- 1½ lbs flank steak OR 4 chicken breasts
- 1 large Vidalia onion
- 1 large red bell pepper
- 1 large green pepper
- 2 poblano peppers
- 1 tbsp extra virgin olive oil
- salt and pepper
Pico de Gallo
- 1½ lbs ripe red plum tomatoes
- 1 cup white onion finely minced
- 1 medium jalapeno (optional) seeds removed and finely chopped
- 2 tbsp fresh lime juice
- ¾ tsp sea salt
- ¼ cup cilantro finely chopped
Instructions
The Marinade
- In a small bowl, add all the marinade ingredients and stir together until mixed well.
- Place the meat of choice in a gallon plastic bag and add the meat. Shake to coat the meat and set aside to rest.
Fajitas Meat and Veggies
- Cut the onion, bell peppers, and poblano peppers into strips.
- Add 1 tbsp EVOO to a frying pan and heat over medium-high. Add onion, peppers, and chilis. Sauté until soft and brown around the edges. About 5-7 minutes.
- Lightly coat a griddle pan with EVOO. Heat on high heat. Add beef or chicken and sear for 3 minutes. Remove from heat. Slice the meat very thinly on the bias and return it to the griddle to cook through.
- Heat tortillas. Add meat and veggies and salsa or pico di gallo..
Pico de Gallo
- In a medium serving bowl, combine the onion, jalapeno, and lime juice. Let it marinate while chopping the tomatoes and cilantro.
- Add the tomatoes and cilantro to the onion/pepper mixture, then stir to combine. Taste. Add more salt if needed.
Holy Guacamole: Creamy, Fresh, and Crowd-Approved
No fiesta is complete without a bowl of guacamole that disappears in minutes. This one is creamy, bright, and perfectly balanced — the kind of guac that makes people hover near the bowl pretending they’re “just grabbing one more chip.”
It’s simple, fresh, and comes together in minutes. Serve it with chips, spoon it onto fajitas, or eat it straight from the bowl. No judgment here.

Simple Salsa: Fresh, Zesty, and Addictive
Homemade salsa is one of those things that instantly elevates your spread. It’s bright, punchy, and tastes like it came straight from your favorite Mexican restaurant.
This version is quick, fresh, and perfect for dipping, drizzling, or spooning over your fajitas. Make a double batch — trust me.

Classic Margarita: Because Every Fiesta Needs a Sip
A fiesta without margaritas is just a meeting. These classic margaritas are refreshing, citrusy, and dangerously easy to drink. Shake them up for two or mix a pitcher for the whole crew.
Salted rim optional. Good vibes only!
Classic Margarita
- 2 ounces blanco tequila
- 1-1/2 ounces orange liqueur (triple sec, Cointreau, or Grand Marinier
- 1-1/2 ounces fresh squeezed lime juice
- 1/2 ounce agave syrup
Pour ingredients into a shaker and add ice. Shake till frosted. Pour into a glass with salted rim and ice. Add a lime wedge for garnish.
Bring It All Together
Set out your fajita bar, bowls of guac and salsa, a stack of warm tortillas, and a pitcher of margaritas. Add some festive music, a few colorful napkins, and suddenly you’ve created a whole experience — not just dinner.
